Mayonnaise

We first heard about Whole30 from a few friends. While we never officially followed the Whole30 method, we ended up falling in love with many of their recipes — especially the condiments! This homemade mayonnaise became one of our favorites. It’s made with just five simple ingredients, unlike the long list you’ll find in store-bought versions. We add a little mustard powder for extra flavor, and now we always keep a jar in our fridge.

When we first introduced our homemade mayonnaise to my mom, she thought we were joking — it looked just like the real thing! It really does look (and taste!) just like the real thing.

 

Homemade Mayonnaise

You’ll need:
1 large egg (room temperature)

1 cup light olive oil (or any healthy oil like avocado oil)

1 tablespoon fresh lemon juice (or apple cider vinegar)

1/2 teaspoon sea salt

1 teaspoon mustard powder



How to make it:
In a tall jar or blender, combine the egg, lemon juice (or vinegar), salt, and mustard powder.

Using an immersion blender (or a regular blender), blend for about 5 seconds to combine.

Slowly pour in the oil while blending on low speed, allowing it to emulsify and thicken.

Once thick and creamy, taste and adjust seasoning if needed.

Store in an airtight jar in the fridge for up to 1 week.

(Makes about 1 cup of mayo.)


A little tip:
If your mayo doesn’t thicken the first time (it happens to everyone!), don’t toss it! In a clean bowl, add a tablespoon of water, lemon juice, or even a fresh egg yolk. Slowly whisk or blend your “broken” mayo into it a little at a time — it usually comes right back together like magic.
